After my husband treated me with a delicious lunch ,we came home and now was very much lus for something rich and creamy.......My thoughts were either sojee or potatoe pudding with stewed dried fruit. This recipe is a combination of two recipes from Auntie Sabie Siers and the boeka treats ,so I do my own thing ,add a littlle here and take away a little there .Mmmm the potatoe pudding was more appealing to me and the rest of the family too , so here goes......
Ingredients:
1kg potatoes, boiled till very soft
200g margarine
1 and 3/4 cups of sugar
1 cup selfraising flour ,mixed with 1 cup milk to form a smooth paste
4 cups milk
3 tablespoons custard,mixed with some of the milk to form a paste
6 large eggs
1 tsp vanilla essence and 1 tsp almond essence
1/2 tsp salt
Method:
After potatoes are softly boiled and water drained from it add the sugar an butter while still hot.Mix it thoroughly ,then in a seperate bowel you add the 6 eggs,salt and the essences and mix it all together.Add the self rising flour mixture that is smooth as well as the custard mixture to the ingredients.Mix it till smooth (you may beat it on medium speed), lastly add the 3 cups of milk to the rest of the mixture.Beat for about 2 minutes on medium speed till smooth.
Bake in the oven on 180 c for about 50 minutes in the middle rack of the oven.
Serve with stewed dried fruit.
This recipe is delicious and smooth,will definetelly be enjoyed by all especially the sweet tooths!!

ReplyDeleteWhen I was growing up, I do remember loving potato pudding but I remember that it was called 'porang' or 'porring' something like that. Do you or am I way off the track? my daughter is having a cultural evening at school and my idea is to take 'porang'.
