So after many ,many months of not blogging,it took having met some friends and family over about 6 months to encourage me to start blogging some of my favourite recipes aagain.now where exactly does Irritable bowel syndrome come in to blogging??!!Well having suffered from this for about 6 months now ,seeing a good number of doctors,natural healers and reflexologists,I decided to take the matter in my own hands about a week ago.I decided toc chanfge my cooking and adding more veggies into my meal,daily.So for the past week Ive added a few more recipies including more veggies into my meal.will keep you posted about my results within a month or so....here goes a tasty meal I made last night called stir fried rice and vegetables,Iam sure you will enjoy too..
Ingredients:
2 cups basmati rice
2 pieces stick cinammon, allspice and cardamon
Boil rice with the above and adding about 3 tablespoons of olive oil.Boil for about 20 minutes, strain and keep aside.
Braise 1 large onion in olive oil,adding fresh ginger and garlic to it.When slightly brown add 2 tomatoes and braise for a further 5 minutes .Now add about 5-6 chicken fillets cut up into small pieces,cook for about ten minutes,adding fresh crushed pepper corns,1 tsp paprika,a fresh green chilli , juice of a half a lemon,some soya sauce and a teaspoon of danya/jeero powder.After adding the spices cook for about 2 minutes then add a cut up into long stripes, a yellow pepper,red pepper, fresh danya and a cup of corn and a cup of green peas.After mixing it through you can now add the boiled rice add a dash of olive oil and let it simmer for about 15 mintes on low/medium heat.It can be served with a fresh salad and fried sweet potatoes in a dash of butter,olive oil,origanum and crushed black pepper,you a may add some salt to taste as well.......
This will make quite a bit as it was sufficient for my family (ie 5 kids and my hubby too),should last for 2 meals if you a smaller family............Lekker tangy too!!!Enjoy!
